Pie Crust Recipe

This is one of the easiest pie crusts in the world to make. It was handed down from Grandma and it’s the only pie crust she’s ever made. 

  • 2 cups flour
  • ½ teaspoon salt
  • ¼ teaspoon baking powder
  • ½ olive or coconut oil
  • ¼ cup water

Mix dry ingredients. Add the water and oil and mix with a fork. Roll out between two sheets of waxed paper.

You can also make this crust directly in the pie pan if that’s more your jam. Put the dry ingredients in the pie pan, mix. Add the water and oil and mix with your hands or a fork until combined. Using the palm of your hand and your fingers, work the dough out to cover the bottom, sides and rim. Crimp around the rim if you like.

Strawberry Rhubarb Pie

Ingredients:

  • 3 cups sliced strawberries
  • 2 cups sliced rhubarb

  • 1/4 cup cornstarch
  • 1 teaspoon lemon juice

  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon unsalted butter, diced
  • 1 egg, beaten (for egg wash)
  • Sugar for sprinkling

Instructions:

  1. Preheat the oven to 375°F (190°C) and roll out the pie dough.
  2. Combine strawberries, rhubarb, sugar, cornstarch, lemon juice, vanilla extract, cinnamon, and nutmeg.
  3. Pour the filling into the prepared pie crust and dot with butter.
  4. Add the top crust, seal, and bake until golden brown.
